“Tonight’s gonna be the night of all nights Amy! This is gonna be the greatest dinner and show!
Really? How’s that Bear?” asked Amy.
“I have some guests comin’ all dressed up. We’re hosting dinner and a show.
I wanted to surprise you also. I’ve had help from my friends.
Otherwise Amy how could I surprise you?
“Look at the banquet table. Loaded with wonderful foods.
Some are your favorites. Others you’ve never tasted or seen.
Come to the kitchen with me. There you’ll meet the chefs who dreamed up the foods.
The chefs have come from all over the world. They want to impress you so much.
They know you eat healthy. So they have created dishes you can eat on your diet.
No one will ever know the difference. They’ll be super impressed with the delicious tastes and smells.
I know I was. This is a special soup recipe that I created just for you Amy.
I have named it Amy’s Carrot Ginger Soup. Here is the receipe for all readers who want to try it.
It is quick and easy. “Yummy” is a description given by one of our guests who ate it.
Amy’s Carrot Ginger Soup
Juice 4 pounds of organic carrots… drink or refrigerate the juice
Fiber from the 4 pounds of juiced carrots
2 T. of curry powder
1 can of coconut milk (I use full fat)
1 32 ounce carton of organic vegetable stock
3 organic fresh garlic cloves
1 large white organic onion
1 tablespoon of fresh organic ginger
Directions for cooking:
2 T. of organic vegetable stock in large pan. Dice organic onion, garlic cloves and ginger. Cook onion, gloves and ginger until onions turn clear. Add carrot fiber, curry, vegetable stock and coconut milk. Lower heat until ingredients simmer. Stir so nothing sticks to bottom of the pot. Taste to make sure carrots have cooked… 15-20 minutes. For health reasons I use stainless steel pots rather than aluminum or copper.
Blend with immersion blender or other type blender. Makes a delicious light carrot colored creamy smooth soup.
Serve warm with a garnish on top… maybe cilantro, green onions or sour cream.

The guest started to stand up from the dining table. Chairs were pushed back as people stood.
“Now that everyone has enjoyed dinner. Come to the garden with us.”
Amy and Bear led the guests to the garden lit with lights. Footlights lit the garden paths.
Bear flicked on an overhead light. Guests saw chairs in a circle.
“Please be our guests and relax. The show will begin soon.”
Once Bear saw that everyone was seated. He turned the overhead light off.
Soon lights flickered all over the garden. They gathered in the center of the circle to begin their dances.
The lights danced in patterns. They formed flowers, fireworks, butterflies, music symbols and more.
Light tinkling of water started. Then the rushing sounds of a waterfall.
The lights danced around the waters. Geysers of lighted water splashed.
Then the waters returned to tinkling. Then disappeared into nothing.
The lights glowed brighter, brighter then brighter. Slowly dimmed into nothing.
The show was over. Bear turned up the overhead light.
Guests applauded as the overhead light slowly grew brighter.
“What a wonderful evening. Thank you for dinner and the show.
We were so surprised. Actually delighted.
We never expected anything like this.
The invitation did say dress formally. Be surprised with a stupendous evening.
We’ll never forget this evening. Thank you Amy.
“It wasn’t me that pulled this off. It was Bear and his friends.
I’m as surprised as you. I think I’ll let him do all the parties from now on.
The food was exceptional. The entertainment in the garden… just the perfect touches.
I can’t wait to find out everyone who was involved in pulling this off.
Bear who did all of the work? Everyone here did… you just said that in a roundabout way.
They said they were as surprised as me. It took everyone here to create a wonderful party… so everyone did the work.
Everyone dressed for a formal ocassion. That took work… took work to get here on time… to attend this affair.
We all did this together. So let’s applaud each other… for memories take a candle as you leave.
The guests chatted as they left Amy’s Castle. A delightful evening caressed them with gentle breezes.
Amy took Bear in her arms. Asked Bear to dance.
“I don’t know how to dance. I can fly… so let’s fly in rhythm with the night breezes,” said Bear.
“Look who flies with us. It’s the fireflies… from the show earlier this evening.
They are trying to teach us to perform. What pattern is this?
Isn’t this the perfect end for a perfect evening?” asked Amy as her formal gown billowed behind her.
